I would argue against changing blocks too much as at the end of the day, people need to be able to view the map in either vanilla or easycraft and still know what they're looking at and have, overall, the same experience. Reskinning non-blocks to whatever is fine, but the blocks themselves need to resemble the vanilla textures relatively closely.
