There are very many, but i'll list some of the more notable ones.
Sasha Sashiromiya

Sasha is a bit of an odd one, spawning from a video on Nico Nico Douga as a concept for a new character for Hisoutensoku, and gained quite a bit of popularity among the fans. She is a Daidarabotchi with the ability to manipulate shadows. Actually, I think I remember Zun actually mentioning this character once, saying it sort of inspired Cirno's story in Hisoutensoku, since Cirno in her story said she saw one of Sasha's species, but it was actually Hisoutensoku.
Karen Yawata

THis charater was in a fan project for imagining bosses for UFO, and she was the best out of all of them. That's all there really is info-wise on her, but her design grew very popular with the community.
Sugar Satellite

This character is the exact opposite of the last one, and has lots of info about her. Here's a bio thingy.
Sugar was born as a fairy by accidental causes. A normal natural process happened when Sunny Milk said jokenly "the 4th of the three youkai of light" at some time. Because Sunny is part of the Three Fairies of Light, Sugar was not born in a different way to the three fairies, where she looks like a child who likes to cause mischief, just like what the three fairies do. The specific way Sugar was born is complex and unknown. During the time, she wanted to cause mischief and came across the three fairies. She saw them having a danmaku fight with Cirno and they are the first other fairies she seen in her life. She got interested and decided to approach the group.
She was created for a little cmoic series, and grew very popular very fast.

Sometimes when you're driving down a road, a bug hits your windshield. It's ugly and unpleasant, but you just activate the wipers / cleaning fluid and it's gone in a few seconds. It's just part of driving down the road. You don't dwell on it, because that'd be silly. Bugs aren't worth the time.
You just discard their guts and keep on driving.
